Creamy Quinoa with Roasted Cherry Tomatoes & Goat Cheese
Well this summer we found a tomato plant in a place where we didn't plant it. We thought it was a little strange but it looked like a really healthy plant so we thought, why not?! Fast forward to today and we have a six-foot-tall, three-foot-wide cherry tomato bush that has taken over the corner of the yard and is producing tomatoes like mad. I'm not completely sure how it got there or how it lived through the winter but I am mighty glad it did. Of course, now I need to figure out what to do with all of them!
Creamy Quinoa with Roasted Tomatoes and Goat Cheese
1 c cooked quinoa
1 c roasted cherry tomatoes
2 wedges of laughing cow garlic and herb cheese
1 tbsp fresh parsley, chopped
2-4 oz fresh goat cheese, crumbled
Combine all of your ingredients (including all of the oil and juice from the roasted tomatoes). Add salt and pepper to taste if needed. Enjoy!
