Green Goddess Dressing/Dip
This dressing is actually the product of a recipe gone wrong. I've admitted before that I'm not the best at measuring my ingredients. I try to measure accurately so that you get the same results as I do when you recreate these masterpieces (umm, too strong of an adjective too? I think not!). But sometimes I go a little farther with one ingredient or another and sometimes instead of a complete fail, I find something that is even better than what I was hoping to make.
That is how I came up with this, which originally started as homemade ranch dressing :) So this should teach all of us to be creative in the kitchen and go rogue once in a while. The result could be amazing!
3 scallions, whites and greens, roughly chopped
1 c fresh basil leaves
1/4 c fresh parsley leaves
2 tbsp lemon juice
2 tbsp dijon mustard
2 1/2 tsp salt
2 tsp black pepper
1 1/2 tsp chopped garlic
1 c low-fat mayonaise
6 oz plain greek yogurt
1/2 c low-fat buttermilk
Put all ingredients into a food processor and puree until fully combined and all herbs are chopped and combined. Refrigerate for 1 hour and enjoy!
This dressing is delicious over salads but also perfect if used as a dip for vegetables!
