Dark Chocolate Cherry Brownies

My hubby loves chocolate covered cherries! In fact, purchasing him a box is already on my list for next is sort of a tradition and may be something I will try to home-make this year.  But first, we take a look at this week's Food Matters Project recipe, chosen by Margarita of Let's Cook and Be Friends.  All I can say is THANK YOU! I've been drooling over this recipe ever since I purchased the cookbook and was hoping someone would pick it quickly!
This delicious and versatile combination screams to be played with and SO many different combinations and recipes came to mind.  But my hubby requested that I make brownies soon (that was a few weeks ago) so I figured this combination would have to do.  Believe me, putting this combination into a brownie was one of the smartest things I've done all weekend.  Dark Chocolate, cherries and pecans....oh my!
If someone could just hurry up and invent a scratch and sniff blog application...the smell of these cooking on Sunday should be bottled up as perfume.  I know I would wear it daily, wouldn't you?

Until then, you MUST try these! Another reason to change to a whole wheat, low sugar diet: pure deliciousness!  This is just another recipe that will make you a believer.

Whole Wheat Dark Chocolate Cherry Brownies with Pecans
3 tbsp unsalted butter
3 tbsp coconut oil
3 oz 85% dark chocolate
3 oz 90% dark chocolate
2 oz 70% dark chocolate with orange peel
1/4 stevia brown sugar blend
1 tsp vanilla
2 eggs
1/4 c whole wheat pastry flour
1/4 tsp salt
1 c chopped pecans
1/3 c dried cherries
1/3 c dark chocolate chunks (60% cocoa or higher)

optional: 1/4 c dark chocolate chips melted and drizzled over the top of the brownies

Preheat your oven to 350 degrees and grease an 8x8 baking pan (either glass or metal).  Either in a double boiler or microwave safe bowl, melt butter, coconut oil and chocolate together (microwave for 30 second increments, stirring in between, until melted).  Remove from heat and cool for 5 minutes.  Pour the chocolate mixture into your stand mixer or a large bowl. Add the brown sugar (you can also use dark agave nectar instead, or regular brown sugar if you aren't watching your sugar intake) and vanilla.  Then beat in eggs, one at a time).  Add flour and salt and mix on medium for 1 minute until batter becomes smooth and glossy.  Add nuts, dried cherries and dark chocolate chunks and stir to combine.  Bake for 20-25minutes or until a toothpick comes out clean.  Enjoy!

p.s. have you ever tried the Chukar Cherry brand of chocolate covered cherries? they're the best ever!
