Peanut Butter Brownie Sundae
Take a look at these! Would you believe me if I told you they were ON my diet? No? Well believe it! Today is the day that I make you a believer in a better for you lifestyle. You CAN have your brownie sundae, eat it too, AND not feel incredibly guilty when you are done. How does that sound?
Let me also introduce you to one of my new favorite dessert must-haves: Peanut Butter Whipped Cream! I have to thank my sister for this one. She made a variation of this amazing deliciousness for her the icing on her son's second birthday cake...I am not lying or embellishing when I say A-M-A-Z-I-N-G!
This post is really just the recipe for the Peanut Butter Whipped Cream...the brownie and dark chocolate drizzle should really just be seen as the item used to eat the icing. The brownies are just my black bean brownies cut into fun shapes and the dark chocolate drizzle is just that....I melted 1/2 of a 85% dark chocolate bar and drizzled it over these sundaes.
I guess all we are missing is the cherry, but why waste your time with unnecessary added sugar when you can focus your time on these?
I give you these today in honor of my mom's birthday! HAPPY BIRTHDAY MOM! You are my daily inspiration, my strength and my hero. I hope to be more and more like you as I 'age gracefully.' I mean, lets face it... at least I know how beautiful I'll look when I'm older :) Thank you for believing in me and being my biggest fan!
Peanut Butter Whipped Cream
1 c cold whipping cream
1/2 c peanut butter (no sugar added peanut butter)
2 tbsp milk
1 tbsp honey
In a small bowl, combine the peanut butter, honey and milk until fully combined. Set aside. In a large bowl, whip the cream until you've reached the stiff peak stage. Fold the whipped cream and peanut butter mixture together (gently!) until just combined. Spoon or pipe onto brownies and drizzle with dark chocolate. Enjoy!
