{Crock Pot} Cerveza Carnitas Tacos

I know, yet another Mexican dish....I promise, this one is amazing too!  So amazing that we've been eating it for three days and aren't tired of it yet! 

Mexican is one of our favorite types of cuisine.  It inspires our weekly menu at least once or twice a week so I'm not surprised that the Cinco de Mayo celebrations really continued in our house all week!

I have to thank Jessica from How Sweet It Is for her recipe for Crock Pot Pulled Pork.  I made a few additions/adaptations but it was such a great idea and made making dinner for friends incredibly easy!

Cerveza Carnitas Tacos
adapted from How Sweet It Is
1 2-3lb pork shoulder roast
1 beer
3-4 tbsp adobo sauce
2 tbsp garlic powder
2 tbsp salt
2 tbsp black pepper
2 tbsp onion powder
1 tbsp chili powder
2 tsp cajun seasoning
1 tbsp olive oil
 Equipment: crock pot

Place the pork roast into a large crock pot and sprinkle with the spices.  Pour the beer into the crock pot (around the pork) and add the adobo sauce.  Cook the pork on high for 10-12 hours.  Once it is done cooking, pull the pork apart with forks and keep on low until ready to serve.  Enjoy!
