Whole Wheat Pancakes

I love Saturday mornings! Although our weekends are usually very busy, I love when we don't make any plans and get to sleep in and make a big breakfast together.

Saturday mornings growing up meant waffles or pancakes.  My mom made the BEST pancakes which made me love our Saturdays even more, but since Bisquick is no longer in my pantry I've been on the search for the best whole wheat pancake that tastes just like mom', I've found it!

You NEED to try these.  I promise, your health and your wallet will thank you in the future.  It is a simple way to take processed foods out of your diet and eat something real and incredibly delicious.  We won't be purchasing pancake mixes anymore :)

Whole Wheat Pancakes
2 c whole wheat pastry flour
4 1/2 tsp baking powder
1/2 tsp salt
1 tbsp buttermilk powder
1 3/4 c skim milk
2 large eggs
1 tbsp honey
1 tsp vanilla

Mix dry ingredients together in a bowl.  Add eggs, vanilla, honey and milk and mix to combine.  Don't over mix.

Spray a pan with cooking spray and add your batter in spoonfuls to create your pancakes.  Wait until you see a good amount of small bubbles forming on the cake (2-3 mintes) and flip.  Cook on the second side for an additional 1-2 minutes. Enjoy!

Welcome Digigirl! This first batch made 12 5-6" pancakes (plus, 1 2" pancake that we made to 'test' the batch before we made the rest). Hope you like them!
