Banana Walnut Pancakes
Pancakes are one of my favorite foods. So versatile, so easy to make, just the perfect comfort food.
These are the perfect example of what you can do with a good base recipe. This time we added slices of banana (to add sweetness to the recipe because there is no added sugar) and walnuts for some added protein and crunch!
Banana Walnut Pancakes
2 eggs, beaten
2 c buttermilk1/4 c canola oil
2 tsp baking soda
1/2 tsp salt
1/2 c wheat germ
1/2 c whole wheat pastry flour
1 c brown rice flour
Added toppings:
sliced bananas1/4 c walnuts, chopped
In a large bowl, beat the eggs. Then add the buttermilk and canola oil and stir to mix. In a seperate bowl, combine your dry ingredients. Then add the dry to the wet and stir to mix. Let the batter sit for 10 minutes, then stir again. If batter is too wet, add more brown rice flour, in tbsp amounts.
Pour batter onto a a griddle pan and top with sliced bananas and walnuts before flipping to the second side. Top with additional walnuts.
Or you can add chocolate chips! Enjoy!
