Whole Wheat Chocolate Chip Muffins

My husband LOVES chocolate chip muffins.  I used to too, but the white flour, full-of-sugar version just doesn't work for me anymore.  BUT just because we are eating the 'better for you' way (whole wheat and low/no sugar) doesn't mean that you can't have 'treats' like you used to.

Thankfully, hubby is completely open to trying new things so I thought I would make these my way and hope for the best....they turned out great!

Of course, if you are looking for that fluffy, white muffin, these won't be that.  Baking with whole wheat flour (even using brown rice flour) will always be a little bit dryer and crumblier than the classic white version.  But we think these are delicious!!

Eating these muffins are almost like having dessert for breakfast.  And who doesn't LOVE that!

Whole Wheat Chocolate Chip Muffins
1/2 c butter
1/4 c sugar in the raw
2 tsp baking powder
1 tsp vanilla
2 eggs
1/2 c milk
2 c brown rice flour
1 c dark chocolate chips

Preheat the oven to 350'.  Line the muffin pan with paper cups.  Beat together butter and sugar.  Add the baking powder, salt and vanilla and mix until fluffy.  Beat in the eggs, then stir in the milk.  Mix in the flour then stir in your chocolate chips.

Spoon the batter ito the muffin cups (they will be quite full and the batter will be thick).  Bake muffins for 30 minutes, until the toothpick comes out clean.  Enjoy!
