Black Bean and Peach Salsa

I love a snack or an appetizer that is the perfect "sit around a table and talk for a few hours" sort of food.  The only problem is when your snack is so good that it only lasts for a half an hour instead of the many hours you had intended.  This is one of those....yum!

Hungry hubby and I headed over to visit some friends last weekend and I needed a quick and easy appetizer recipe to throw together on a busy day.  I wanted it to be fun, comfortable (I'm not really into fancy appetizers) and of course delicious.  And, as usual, I needed it to be incredibly easy to make in order to fit it into my busy day.

THIS salsa is better than anything you can get out of a jar (so fresh, so yummy) and it seems to dissappear quite quickly anytime I serve it :)

Black Bean and Peach Salsa
1 can diced tomatoes with green chilies
1 can black beans, rinsed and drained
1-2 peaches, slightly ripe, diced (if large only use one)
1/2 c of finely chopped cilantro
1/4 - 1/2 red onion, finely diced
2 limes, zested and juiced
1/4 c italian dressing
1 small jalepeno, finely diced (optional, if you like it spicy)
salt and pepper to taste

Dice and combine all ingredients above.  Add salt and pepper to taste and serve with your favorite chip.  Also, you may want to make this in advance as it tastes even better after it has been in the fridge for an hour or two.  Enjoy!

I make a mango salsa but the peach looks great! I have to try this next time :)
