Baked Turkey Meatballs

This is a post that I am VERY late in sharing...sorry friends!  My friends made this recipe for dinner for a group of us, so really I guess this sort of a guest post?!  And of course they made this for us like weeks (maybe a month or so) ago.  Oh, well...either way, you NEED to try this recipe!

Luckily I had an empty stomach and my camera to document the goodness!
These meatballs were SO GOOD and everything you want a delicious meatball to be!  My friends that did the cooking are always making delicious dinners...but I think this will always be one of my favorites (hint hint guys...)!

Baked Turkey Meatballs
recipe adapted from Food Network
Cooking spray
1 pound ground turkey meat
1/4 c  whole-wheat bread crumbs
1/4 cup grated Parmesan, plus more for serving
1/2 cup finely grated carrot
1/2 cup finely chopped onion
2 large cloves garlic, minced
2 tablespoons minced fresh parsley leaves, plus more for garnish
2 teaspoons minced fresh thyme leaves
1 egg, lightly beaten
1/2 teaspoon salt
Freshly ground black pepper

Preheat the broiler. Spray a baking sheet with cooking spray. Combine the turkey with all other ingredients in a large work bowl. Form into 2 1/2 -inch balls and place on a baking sheet. Broil for 10-12 minutes, or until browned and entirely cooked through.

these are amazing!!!! I halved the parmasan cheese though. And i made a no sugar added sweet and sour sauce which was lovely over brown rice :) thanks so much for this recipe its going in my favorite recipe card box!

I just made these for the first time and they have such a good taste. My vegetable soup will now have meatballs in it tonight, lol.

These are sooo good. I've made them twice and they are so delicious and light! I love the carrot in them, what a clever way to incorporate veggies! Will definitely be holding onto this recipe!
