12 Days of Treats: Dark Chocolate Cream Cheese Swirl Brownies (Day 10)

What a perfect treat for day 10! Although these brownies are not as sweet as you would expect from a traditional cream cheese brownie (I left out the suggested 1 c of powdered sugar...), they are moist, rich, and perfectly decadent for my holiday list.

Plus (as usual) they are really easy!  I worked a full day yesterday, went for a run, had dinner with friends and easily made these at 10p last night! Okay, so you don't have to make them as late as I did, but you could...it was easy!

Dark Chocolate Cream Cheese Swirl Brownies

1/4 c dark chocolate cocoa powder
1/2 c unsweetened cocoa powder
1/2 tsp baking soda
2/3 c vegetable oil, divided
1 c boiling water
1/4 c sugar in the raw
1/4 c stevia in the raw
2 eggs
1 1/2 c whole wheat pastry flour
1 tsp vanilla
1/2 tsp salt
6 oz reduced fat cream cheese, softened
1/4 c sugar in the raw
1 tsp vanilla
1 egg, beaten

Preheat your oven to 350 degrees and grease an 8x8 square baking pan (you could also use a 9x13 to make more, thinner brownies).  In a large bowl, combine cocoa powders and baking soda.  Add in 1/3 cup of your vegetable oil and mix to combine.  Add your boiling water and stir (or blend) the mixture on low until it thickens.  Stir in your sugar, stevia, eggs and remaining vegetable oil.  Mix until smooth.  Add in your whole wheat pastry flour (using pastry flour will make these brownies lighter and less dense than using whole wheat flour), vanilla and salt and stir to combine (don't over mix).  Pour into your baking pan and set aside.

In a separate bowl, mix together your softened cream cheese, sugar, vanilla and egg and mix well.  Drop this mixture by the spoonful on top of the brownie batter.  Then take a butter knife and (keeping it vertical) swirl the cream cheese into the brownie batter.
Isn't that just beautiful! It tastes as good as it looks!
Bake for 35-45 minutes or until a toothpick comes out clean.  Enjoy!

These look great! Your swirling is fantastic. Mine always comes out a disaster. What's the texture like?
