12 Days of Treats: Carrot Cake Cookies (Day 12)

Yea!! It's Christmas Eve and Day 12 of my 12 Days of Treats! 

Today's treat is a perfect way to finish our celebrate of 'better for you' holiday desserts.  Remember, this holiday it is most important that you practice a little portion control (especially if you are on this diet) and avoid the stuff you could really do without!

Did you know that most Americans gain 5+ lbs over the holidays?  You can avoid this statistic all together and no have to worry about a weight loss resolution in the new year if you start by paying attention to what you are eating today.  And yes, these cookies are 'cookies' but start with just one.  I know, these are SO delicious and that will be hard to do....just think of the one you get to eat tomorrow!!

As I said in my first day post, these treats have some sugar in them.  All recipes are MUCH better for you than the original or traditional treat, but just the same...pratice a little control, you'll feel much better and not have to worry about your belt not fitting tomorrow :)

Carrot Cake Cookies
adapted from Cookie Madness

1 c + 2tbsp whole wheat white flour
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/3 c vegetable oil
1/3 c honey
3 tbsp brown sugar
1 tsp vanilla
1 egg
2 tbsp orange juice (lowest sugar you can find)
1/2 c oats (old fashioned)
2/3 c shredded carrots
1/3 c toasted pecans

Preheat oven to 350 degrees.  In a large bowl, mix together the oil, honey, and brown sugar.  Add the vanilla.  When mixed well, add the egg and orange juice and mix for another 20-30 seconds.  Add the baking soda and spices (salt, cinnamon).  Then add the flour and stir until the flour is absorbed.  Stir in the oats and nuts.

Drop the cookies by the tablespoonful onto a parchment or silpat coverd cookie sheet.  Bake for 10-12 minutes or until lightly browned.

For th icing: combine 4 oz of cream cheese with 2 tbsp of honey and 2-3 tbsp of milk or creamer.  Put icing into a piping bag or zip-lock bag wit the tip cut off and pipe onto cookies.  Enjoy!

These are soooooo good!!! They have the, "I can't have just one" quality! I will be adding this recipe to my cookbook :)

Ooh, these look and sound amazing! I love that they use oil and honey. They're pretty too. :)

I definitely want to try these out! Maybe at Easter, if I can wait that long.

I made these today! I should bring it to your attention that there are some inconsistencies in your ingredients and directions. You call for baking powder but then mention baking soda. I made the first 2 dozen using the baking powder. Then I made a new 2 dozen with the baking soda. The baking soda version is much better! Also in your directions, you forgot to add - fold in carrots after the oats. I mean you figure you need to and it's self explanatory but you never know, someone may totally forget to add! =) I'll be blogging about my experience in the kitchen today. So it was a double bonus for us - carrots and cookies! =)
