Apple Cake

I wanted this cake to be simple, fast...easy and this recipe did not disappoint. Our abundance of apples from our picking trip continue and give me cause for another delicious fall dessert and although similar to the Skillet Apple Cake recipe in ingredients, the method, and final flavors are more subtle. No peeling, all in one bowl, put together in 10 minutes, unfussy cake. Perfection!
Apple Cake

2 cups apples cut into 1/4" cubes, peel on
2 1/2 cups whole wheat pastry flour
1 tbsp baking powder
2 tsp cinnamon
1/4 cup loosely packed light brown sugar
1/2 tsp salt
2 eggs
1 cup buttermilk
1/4 cup butter, melted
Preheat the oven to 400 degrees. Grease a 8x8 square baking dish.

Dice your apples and set aside. Combine flour, baking powder, cinnamon, sugar and salt in a large bowl. In a separate bowl, whisk together the eggs and buttermilk. Once combined, whisk in the melted butter. Pour the wet mixture over the dry and stir until barely combined, don't over mix.
Add the apples and fold them into the batter.

Spoon the batter into the prepared pan, pushing it toward the edges. Bake for 20-25 minutes at 400 degrees until the cake is set and golden brown on top. Enjoy!
